Ingredients
- 2 cups cold water
- 1 cup white or yellow corn meal
- 1 cup cooked rice
- 1 cup milk
- 2 teaspoons salt
- 1 tablespoon shortening
- 2 eggs
Instructions
- Put the water into a saucepan, sprinkle meal into it, and bring to boiling-point.
- Cook four or five minutes, stirring constantly.
- Add rice, milk, salt, and shortening to the mush, and mix thoroughly.
- Cool until lukewarm, and add well-beaten eggs, and turn into a greased baking dish.
- Bake in a moderate oven until a knife comes out clean. Serve from the same dish with a spoon. It may be eaten with the main course in the place of bread, or with milk for luncheon. Bake in the oven for 30 minutes at 325 degrees.
