California Spoon Bread

Ingredients
- 2 cups milk
- 2 eggs (beaten)
- 1 quart boiling water
- 1 teaspoon salt
- 1 cup corn meal
- 2 cups boiled rice
- 8 long or 16 short slices of bacon
Instructions
- Scald the milk in double boiler and pour it on the beaten eggs. Return to boiler and cook until it coats the spoon.
- To the boiling water add salt. Stir in corn meal and cook five minutes.
- Put the custard in buttered baking dish (glass if possible) then add alternately spoonfuls of mush and rice until baking dish is full.
- Arrange the bacon across the top of the dish. If the slices are long they will cross in the center. If they are short they can radiate from center.
- Bake in a moderate oven for 40 minutes at 350 degrees.
