Molded Salmon

Ingredients
- 1 No. 1 can salmon
- 1 tablespoon gelatine
- 2 tablespoons cold water
- 1/2 cup milk
- 1 teaspoon salt
- 2 teaspoons sugar
- 1 1/2 teaspoons mustard
- Few grains cayenne
- 2 egg yolks
- 1 1/2 tablespoons melted butter
- 1/4 cup vinegar
Instructions
- Remove the salmon from the can, rinse well with warm water to remove the oil, and separate into flakes. Soak the gelatine in the cold water.
- Make a boiled dressing: heat the milk in a double boiler and add the salt, sugar, mustard, and cayenne mixed. Add the egg yolks slightly beaten and the melted butter, pour a little of the hot milk over them, then return to the double boiler and cook until thick, stirring constantly.
- When thick, add the vinegar and the soaked gelatine. Strain and add to the salmon. When the mixture begins to set, mold.
- Serve with Cucumber Sauce (see page 230).
