Soak the gelatine in the cold water.2Make a boiled dressing: heat the milk in a double boiler and add the salt, sugar, mustard, and cayenne mixed. Add the egg yolks slightly beaten and the melted butter, pour a little of the hot milk over them, then return to the double boiler and cook until thick, stirring constantly.3When thick, add the vinegar and the soaked gelatine. Strain and add to the salmon. When the mixture begins to set, mold.4Serve with Cucumber Sauce (see page 230).
