Vermont Maple Filling

Ingredients

• 1 cup maple syrup
• Few grains of salt
• 1 egg white
• 1/2 cup whipped cream
• Chopped nuts

Instructions

1. 1Boil syrup until it threads. Add salt to egg white, and beat until stiff. Add syrup to egg white slowly, beating constantly. Add cream, and continue beating until mixture is thick enough to spread. This filling can be used for the top of cake also, and sprinkled with chopped nuts.
