Stuffed Tomatoes, Baked (Pineapple and Cucumber)

Ingredients
- 6 tomatoes
- 1 cup diced pineapple
- 1 cup diced cucumber
- 1 cup bread crumbs
- 1 teaspoon salt and speck of pepper
- 1/4 cup grated cheese
Instructions
- Remove the pulp from ripe tomatoes. Mix the pineapple, cucumber, and part of the crumbs. Season with salt and pepper and stuff the tomatoes.
- Add finely cut tomato pulp to fill, sprinkle with the remainder of the crumbs and the cheese.
- Grease ramekins or custard bowls, place a tomato in each, and bake in the oven for 30 minutes at 350 degrees, until the tomatoes are soft.
