Smoked Salmon En Casserole

Ingredients
- 3/4 pound smoked salmon
- 2 cups diced potatoes
- 3/4 cup sliced onion
- 2 cups peas
- 1 tablespoon butter
- 2 tablespoons flour
- 1/2 cup hot milk
Instructions
- Cut the salmon in half-inch pieces. Cover the bottom of a casserole with the onions and potatoes, add the fish and peas, pour hot water over this, and bake forty-five minutes in a moderate oven.
- Make a white sauce of the butter, flour, and milk and add to the casserole. Cook fifteen minutes longer, stirring if necessary. Total time in the oven, 1 hour at 325 degrees.
