Salmon Cutlets

Ingredients
- 1 cup salmon
- 1 1/2 cups mashed potato
- 1 egg
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon grated onion
Instructions
- Flake the salmon and add all the other ingredients. Form into cutlets, roll first in crumbs, then in egg slightly beaten with one tablespoon of water added, and again in crumbs.
- Fry in deep fat and serve with Creamed Pea Sauce (see page 238). Time in cooking, 3 minutes each, at fat temperature 380 degrees.
