Rice Glace
Ingredients
- 1/4 cup rice
- 1 pint milk
- 1 tablespoon gelatine
- 2 tablespoons cold water
- 3 tablespoons hot water
- 1/4 teaspoon salt
- 1/3 cup sugar
- 1 teaspoon vanilla
- 1/2 cup heavy cream
Instructions
- Parboil rice in salted boiling water five minutes and drain. Put into double boiler with hot milk, cooking until soft but unbroken. Soak gelatine in cold water, add hot water, salt and sugar, stir until dissolved, and add to rice mixture. Add vanilla, stiffly beaten cream, and more sugar if desired and chill.
