Potato Stuffing

Ingredients

• 2 cups hot mashed potato
• 1 1/4 cups stale bread crumbs (soft)
• 1/4 cup finely chopped salt pork
• 1 finely chopped onion
• 1 egg, slightly beaten
• 1 1/2 teaspoons salt
• 1 teaspoon sage

Instructions

1. 1Put the potato through the ricer that there may be no lumps.
2. 2Add remaining ingredients and mix lightly.
3. 3Any dripping or fat may be used in place of the salt pork.
4. 4Use as a stuffing for roast goose.
