Potato Pyramids with Onion Purée

Ingredients
- 2 cups mashed potatoes
- Melted butter
- 4 tablespoons grated cheese
- 1/2 cup chopped onion
- 2 tablespoons butter
- 1 cup water
- 1 teaspoon cornstarch
- 1 teaspoon Worcestershire sauce
- Salt and pepper
Instructions
- Shape well seasoned mashed potato into pyramids, brush with butter, and sprinkle with grated cheese. Place in shallow baking-dish and pour onion purée around them. To make onion purée, cook onion in the butter, add water, and simmer until soft enough to put through the strainer. Add cornstarch mixed with a little water, and seasonings. Bake until brown in the oven for 20 minutes at 350 degrees.
