Potato Muffins

Ingredients
- 4 tablespoons shortening
- 2 tablespoons sugar
- 1 egg
- 1 cup mashed potato
- 2 cups flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
Instructions
- Cream the shortening and sugar, add the egg well beaten and then the potato. Mix thoroughly. Sift flour, baking-powder and salt and add alternately with milk to first mixture.
- Bake in muffin tins in a moderately hot oven for 25-30 minutes at 375 degrees.
