Pineapple Souffle

Ingredients
- 1/4 cup butter
- 1/4 cup flour
- 1 cup milk
- 1 cup crushed pineapple
- 3 eggs
- 1/2 cup sugar
- Pinch nutmeg
- 1/4 teaspoon vanilla
Instructions
- Melt butter, add flour, and blend thoroughly. Add milk gradually, stirring constantly, and bring to boiling point; then add pineapple. Beat egg yolks slightly, mix with sugar and add to the mixture. Cook until thickened, being careful not to let mixture boil. Cool slightly, add flavorings, and fold in egg whites beaten until stiff. Bake in a moderate oven for 45 minutes at 300 degrees. Serve hot with whipped cream.
