Remove from fire, rub flour into fat, then gradually add milk, and cook until it thickens, stirring constantly.2Season to taste and add the chopped meat. Cool, and add enough bread crumbs, cooked rice or potato so that the mixture can be molded in form of croquettes.3Dip croquettes in crumbs, egg, and crumbs again and fry until brown in hot fat. Serve with cream sauce or Tomato Sauce (see page 239). Any left-over meat may be used and seasoned with chopped green peppers, pimiento, chopped olives, or celery. Cook in the hot fat for 4 minutes each at 370 degrees.
