Cook until smooth and thick, about ten minutes. Add egg and lemon juice and cook three minutes longer. Fill pastry shells. Fold sugar into stiffly beaten egg whites, and then add very finely minced candied fruit, using various combinations as preferred. Place this over the tops of the tarts, and brown delicately in the oven. Bake in the oven for 15 minutes at 325 degrees.
