Japanese Filling

Ingredients

• 1 cup grated cocoanut
• 2 cups sugar
• 2 cups water
• 1/4 teaspoon salt
• 1 cup cornstarch
• 1/2 cup lemon juice

Instructions

1. 1Cook cocoanut, sugar, water, salt, and cornstarch for forty-five minutes in double boiler. Add lemon juice and spread while hot between layers of cake.
