Fish Loaf

Ingredients
- 3 1/2 tablespoons butter
- 3 1/2 tablespoons flour
- 2 cups milk or fish stock
- 2/3 teaspoon salt
- 1/4 cup soft bread crumbs
- 2 cups cooked fish
- 2 eggs
Instructions
- Melt butter or any suitable fat, add flour, and when smooth stir in liquid.
- Cook until thickened, add seasonings and crumbs and cool.
- Remove bones and skin from fish, add to sauce and mix well.
- Stir in beaten yolks of eggs and fold in stiffly beaten whites.
- Turn into a greased baking dish and bake in moderately hot oven until firm.
- Serve with Cheese Sauce (see page 235). Bake in the oven for 30 minutes at 375 degrees. Servings, 6.
