Corn Meal Bread

Ingredients
- 1 1/4 cups water
- 2/3 cup corn meal
- 1 1/2 teaspoons salt
- 1/4 cake yeast, softened in 1/4 cup lukewarm water
- 2 1/2 cups flour
Instructions
- Pour the water over the corn meal and salt, and heat to the boiling-point. Cook twenty minutes in a double boiler or over hot water. Cool, add yeast and flour, then knead and let rise until double in bulk.
- Shape into a loaf and let rise in the pan until again double in bulk. Bake in a moderately hot oven for 50 minutes at 380 degrees.
