Chocolate Potato Cake

Ingredients

• 1/2 cup shortening
• 1 cup sugar
• 2 eggs, slightly beaten
• 3/4 cup mashed potato
• 1 cup flour
• 1 teaspoon baking powder
• 1/4 teaspoon salt
• 3/8 cup milk
• 1/2 cup grated chocolate (melted over hot water)

Instructions

1. Cream shortening and sugar. Add eggs and potato.
2. Add the flour, mixed with the baking powder and salt, alternately with the milk.
3. Add the chocolate last.
4. Bake in layers or muffin-tins in a moderate oven for 20 minutes at 350 degrees.
