Chocolate Potato Cake

Ingredients

• 1/2 cup shortening
• 1 cup sugar
• 2 eggs, slightly beaten
• 3/4 cup mashed potato
• 1 cup flour
• 1 teaspoon baking powder
• 1/4 teaspoon salt
• 3/8 cup milk
• 1/2 cup grated chocolate (melted over hot water)

Instructions

1. 1Cream shortening and sugar. Add eggs and potato.
2. 2Add the flour, mixed with the baking powder and salt, alternately with the milk.
3. 3Add the chocolate last.
4. 4Bake in layers or muffin-tins in a moderate oven for 20 minutes at 350 degrees.
