Chicken Timbales

Ingredients
- 1/2 cup bread crumbs
- 1/4 cup milk
- 1/3 cup chicken meat, ground
- 1 egg white
- 3/4 teaspoon salt
- Pepper, nutmeg
- 1/4 cup whipped cream
Instructions
- Cook the bread crumbs and milk until smooth in consistency and the mixture comes away from sides of pan. Add chicken and egg lightly beaten. Season to taste. Whip cream and fold into chicken mixture.
- Pour into timbale or custard cups. Set in a pan of hot water and bake in a moderate oven until firm. Remove from water and let stand a few moments before unmolding. Bake in the oven for 30 minutes at 350 degrees.
- Turn out on a warm platter. Serve with currant jelly or Soubise Sauce (see page 238).
