Apple Tapioca

Ingredients
- 1/2 cup pearl tapioca
- 2 cups boiling water
- 3/4 teaspoon salt
- 4 medium-sized apples
- 1/2 cup sugar
Instructions
- Soak tapioca in cold water several hours or over-night. Drain, add boiling water and salt, and cook until clear in double boiler. Peel and core apples, arrange in a buttered baking dish, and sprinkle with sugar. Pour over the cooked tapioca and bake until apples are tender. Serve with cream. Bake in the oven for 45 minutes at 350 degrees. Servings, 4.
