Scotch Oat Cake

Ingredients
- 1 1/2 cups steel-cut oatmeal
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon baking powder
- 1 tablespoon butter
- 1/2 cup warm water
Instructions
- Mix dry ingredients, melt butter in warm water and add to the mixture.
- Oats must be freshly cut or a bitter taste will make the cakes disagreeable.
- Knead dough until firm, adding more oatmeal if necessary.
- Divide dough into twelve parts, knead and roll each bit of dough into a thin round cake.
- Lay cake on hot griddle and cook until edges begin to curl.
- Lift carefully and brown in a moderate oven until crisp. Bake in the oven for 30 minutes at 350 degrees.
