Lemon Crumb Pie

Ingredients
- 12 tablespoons crumbs
- 5 tablespoons sugar
- 2 tablespoons shortening
- 1 1/2 cups milk, scalded
- 3 eggs
- 1 lemon (grated rind and juice)

Instructions
- Mix the crumbs, sugar, shortening, and lemon rind. Stir in the hot milk. When cool, add the egg yolks beaten, and the lemon juice.
- Line a pie plate with pastry. Pour in mixture and bake in a moderately hot oven. When about done remove a minute, heaping on meringue made from the whites of eggs beaten stiff, with one-quarter cup sugar added. Brown in a moderate oven. Bake in the oven for 35 minutes at 400 degrees 5 minutes and 350 degrees 30 minutes. Time for meringue, 20 minutes at 325 degrees.
