Fried Scallops

Ingredients
- 1 quart scallops
- Salt, pepper
- Bread crumbs
- 1 egg
Instructions
- Clean scallops, turn into a saucepan, and cook until they begin to shrivel, drain, and dry between towels. Season with salt and pepper, roll in fine crumbs, dip in beaten egg, again in crumbs, and fry in deep fat for 2 minutes each at a fat temperature of 360 degrees. Drain on brown paper. Serve with Tartare Sauce (see page 239).
